INFO: The 45 to 70 year old vines for this wine are grown on rocky, schist soil with quartz and flint pebbles. The vineyards are managed with sustainable agriculture practices.
The wine is fermented at low temperatures conserving the aromas of the must, then matured on the lees ‘sur lie’ from 8 to 14 months with regular bâtonnage. Bottling is straight from the fermentation lees, leaving a light natural spritz.
Lemon, grapefruit, hints of honey and a minerality make this a perfect match with seafood, Asian cuisine and goats cheese
