INFO: Le Chiantigiane is a forward-thinking, quality-orientated co-operative in the heart of Chianti. Located in the south of Tuscany, the vineyards sit across gently rolling hills that rise to about 400 metres above sea level.
Fermentation takes place in stainless steel tanks. Near the end of the process, selected Sangiovese grapes—left to dry on the vine—are added to create a well-balanced Governo IGT Toscano. This traditional “Governo” method enhances the wine’s structure and refinement. The addition of overripe grapes releases sweet, noble polyphenols, increases alcohol to 13.5% vol., and boosts extract, glycerol, and overall smoothness. The second fermentation is temperature-controlled to extend colour and flavour release, producing a fruitier wine with lasting aromatic and taste characteristics. After this, the Rosso Toscano Governo is racked and undergoes malolactic fermentation for improved balance. Finally, it rests on fine lees, where gentle yeast breakdown adds further softness to the finished wine.
