INFO: ‘Les Hâtes’ is one of the best terroirs in Santenay village; this appellation is so close to a premier cru! The vines are protected, and the soils suffer little erosion, on well-drained and gently sloping limestone soils. The old vines were planted in 1935.
Grapes are hand-harvested at optimal ripeness, followed by gentle pressing. Careful selection of the cuvée ensures only the best juice is used. Cold pre-fermentation maceration (4 days), alcoholic fermentation (11 days), post-fermentation maceration (10 days). Ageing takes place in French oak barrels for up to 14 months, 12 in barrels on lees without racking with 25% new, to add complexity and texture. The wine is further aged on its lees for 2 months in vats, enhancing richness and depth.
This Pinot Noir from Domaine Bachey-Legros shows aromas of red fruit like cherry and raspberry, blackberry and currant and hints of earth and spice. The fruit flavours should carry through, joined by a lovely acidity, velvety tannins and a long finish.
