INFO: Fermentation, partially with indigenous yeasts, was temperature controlled and took more than 2 months to be completed. This was followed by the wine’s storage on its fine lees, without batonnage, until one week before bottling. In total the wine stayed for 8 months ‘sur lie’. To retain the wine’s natural carbon dioxide and freshness it was only filtered once prior to bottling.
Delicate notes of nectarines, yellow peaches with zesty and fresh lime fruit. It has a great intensity, minerality and structure combined with a lovely crisp acidity and a superb fruity finish of ripe peaches, nectarines, citrus and lime.
